Another one of Lustau's Almacenista bottlings, this comes from Sanlucar and is a Manzanilla Pasada. It's aged by a small producer, Manuel Cuevas Jurado and comes from a solera of 80 barrels. The average age is about 7 years old. I love the nose on this. Green olives, a hint of jamon, saline and almond. Good length and it goes really well with fried litte fish. A delicious example of Manzanilla Pasada.
Pale straw in colour, this Manzanilla Pasada is delightfully aromatic, reminiscent of green apples, with the characteristic hint of a sea breeze. Dry, fresh and light, yet with substance and body and a refreshing acidity.

A plump, juicy, full-bodied Manzanilla, with a quinine streak running through the core of dried grapefruit rind, lemon curd, salted almond and Brazil nut. The long finish picks up an echo of flan. Drink now.92 Wine & Spirits
Although it is often associated with Amontillado, Manzanilla Pasada doesn’t lose its veil of flor. Instead, that veil becomes thinner over time, allowing a slight oxidation that transforms both the color and the flavor, as in this deliciously savory example from Lustau’s Almacenista line. It’s filled with sea-salt notes, sweet spices and candied fruit details. The NV Manzanilla Pasada Almacenista Manuel Cuevas Jurado smells of noble woods, sesame seeds, aromatic herbs and roasted nuts. It has a very dry palate, supple with a slightly alcoholic finish.
