Wachau, Austria

The Knoll winery has a small plot of Pinot Noir, also known as Blauer Burgunder in Austria. The vines grow on sandy alluvial soil at an altitude of around 220 meters and are 25 years old.

The Pinot Noir grape variety, which comes from Burgundy, has developed into an important grape variety for Austrian winemakers. It was first planted in the 12th century by Cistercian monks in the Austrian thermal region.

The grapes were placed on the press as harvested, remained on the mash for four to six hours and were then gently pressed pneumatically. The vintage decides whether it is fermented spontaneously or with the addition of yeast, with preference being given to the first option. The must is fermented in large wooden barrels (500 l) and steel tanks (up to 5000 l). There is no malolactic acid degradation; the young wine remains on the fine lees for three months.

TASTING NOTE: Blauer Burgunder Rosé has a light salmon pink with delicate pink reflections. Fine aroma of red wild berries, citrus zest, fresh cherries, some smoke and herbs.Lively on the palate, juicy and with lemony fruit on the finish.

This versatile, dry rosé from Knolls is a good accompaniment to fine dishes.
