Mt. Etna, Sicily, Italy

Bright, fresh, and ready to drink, I Custodi’s classic Etna Bianco is 100% Carricante, grown on 10-year-old bush vines in Mt. Enta’s signature mineral-rich, volcanic soil. After traditional native yeast fermentation, this wine is aged exclusively in stainless steel, which brings a refreshing luminosity to an otherwise quite textural white. White oleander aromas and a walk through ripe stone fruit orchards offset subtle herbaceous, anise notes. Backed by creamy acidity and minerality with a touch of ocean spray, the palate brings green olive, green apple skin, and a slightly bitter almond finish. Pairs well with anything from the sea, particularly grilled octopus coated in lemon, parsley, and EVOO.
Aedes is made from the younger Albarello vines that are in Contrada Muganazzi. More citric fruits dancing with the volcanic minerality, than a study of volcanic minimalism as seen with the Ante bottling.
