Champagne Constantine (Pierre Grandin & Marion Mordelles)

Ville Dommange, Montagne de Reims, Champagne, France

Approximately 1/3 each: Pinot Meunier, Chardonnay, Pinot Noir

This cuvée is perfect as an aperitif or for pairing with salads with peppery greens like mustard or arugula, toasted walnuts and a creamy vinaigrette.

Winery Notes “Light golden color with chalky reflects. Soft effervescence highlights the brightness of this wine. The nose is creamy and full. We smell a beautiful balance between the unctuosity of the red grapes and the citrus aromas from the Chardonnay, giving its finesse to the wine. Subtle notes of pastries such as apricot pie are also perceived. The attack is direct with a beautiful acidic freshness, ending with orange confit notes. A beautiful pairing between mouthwatering roundness and a sharp freshness during the whole tasting. A slight bitterness in the final taste accentuates the complexity of this champagne.”

Tasting Notes for the 2017 vintage:

  • Appearance: Beautiful golden color with fine, elegant bubbles.
  • Nose: Complex and inviting aromas. Expect notes of green apple, crisp orchard fruits, and brioche (from yeast aging). It can also show lemon, caramel, almond, baked apples, vanilla, and hints of delicate florals. Some describe subtle toasty and spicy notes.
  • Palate: Described as fresh, vibrant, and beautifully balanced, with a lovely tension between mouthwatering roundness and sharp freshness. Flavors often include lemon zest, juicy peach, apricot, orange, and baked apple, sometimes with minerality reminiscent of oyster shell. It's often rich, full-bodied, and almost creamy, with a lingering finish that can have notes of crème brûlée or candied orange. Some describe a slight bitterness that adds complexity.
